creative lunching:

I have a non-traditional school-aged luncher who prefers anything but sandwiches. During the school year I've gathered some simple ideas but would love to know how you approach creative lunches? [Lunchbox car here.]
Our typical rotating menu:
- peanut butter with apples, carrot sticks, crackers
- deli meat "rolls" & cheese
- customized trail mix
- homemade granola & yogurt
- banana bread "sandwiches" (cream cheese spread in the middle)
- Greek pasta salad
- hummus & pita triangles
